  • The Particules Crayeuses cuvée is the current flagship Blanc de Blancs. The fruit comes from vines at least 40 years old from the Côtes des Blancs communes of Chouilly, Cramant, Avize, Oger and Mesnil-sur-Oger.

    The grapes were harvested by hand and pressed in a traditional 4,000 kg Coquard press. Only the juice from the first run was used for fermentation.It was fermented and aged spontaneously partly in stainless steel tanks and partly in 600-liter demi-muids from Burgundy. Malolactic fermentation occurred spontaneously after alcoholic fermentation. The base wines aged for six to 18 months, followed by 24- to 36-month aging on lees (sur lattes). Particules Crayeuses is an assemblage of two vintages plus 30% from a solera started in 2013. Dosage is 0 g/l. Unlike most other Champagnes, the pressure is 4.5 bars instead of 6.

    Color: light golden yellow with a fine mousseux.

    Nose: The Cuvée Particules Crayeuses Zéro Dosage is not yet very different in aroma from the Cuvée Extra Brut, at least not at first. In fact, here we find the same wonderful melange of a chalky component with a lot of citrus power and brightness. Noblesse and elegance, delicacy and sensuality are also evident. Then, however, the champagne builds up more tension already in the fragrance, it remains more citrusy than the Extra Brut, chalkier and a little steely. There is also a hint of almond slivers and toast.

    Palate: On the palate, the difference of 4 grams of dosage then becomes even more obvious. The Grand Cru draws its power and tension from the use of old vines deep in the different chalk soils, coming across as bright and citrusy, punchy and energetic. The power meets an elegant mousseux, and because of the pressure of only 4.5 bars, a wonderful creaminess and a certain vinosity develop at the same time. The bright fruit is accompanied by spices, some vanilla, warm toast and almond cream. This is already fun.

  • Served by the glass. Even though the date of disgorgament is unknown, in the mouth the rusty and rancid notes predominate. Deliciously dry but it us not very deep. Very long either. On the nose it is fulminantly austere with some citrus note. In my humble opinion, needs food urgently.

    Servido por copas. Aun desconociendo la fecha de degüello, en boca predominan las notas oxidadas y rancias. Deliciosamente seco aunque son mucha profundidad. Tampoco muy largo. En nariz es fulminantemente austero con alguna nota cítrica. En mi humilde opinion, necesita comida de forma urgente.
