  混浊的淡金黄色，像是没过滤的酒，闻香有一层酒精感，苹果，饼干，酵母带来的面粉团的香气，果子熟透快烂的感觉，还有些氧化感，入口酸度中等，酒液咸，收口甜，精致的奶油，苹果，桃子，后段辛辣。醒酒半小时表现最漂亮，能感觉到淡淡的烤芝麻的香气，精致的用桶能透出一丝它的血脉特征。但后面又回到酒糟苹果的味道，带着辛辣和回苦。果实太过成熟，丢失了精致感，瓶中的发展似乎也不受控制。当然也可能这不是它的正常状态，因为开瓶时候有明显的浸塞和漏液，让我怀疑这酒的保存有问题。

  Seemed like a flaw at first, pop and pour, sour apple, slight fizz, saltiness, yeasty nose with apple and some citrus, a subtle bitterness. Definitely unique. Best on a hot day with acidic foods. Gets a bit better with air.

  Drank over 3 days. Some CO2 and somewhat cider-like, characteristics of some of the “natural wines” I’ve had. I was intrigued by the terroir and very disappointed by the winemaking.

  Really interesting glass of wine. Lots of complexity. Not your plain white burg, so be ready for a challenge. Very enjoyable and no rush to finish.

  I've heard interesting things about Soyard and this possible Dijon appellation, so thought I'd give this a try. Vintage ripeness is front-and-center, and while this clearly has an acid backbone, it also seems fairly mature for such a young wine. Flavors and aromas are tasty and charming for a Bourgogne, but I would not cellar this beyond another year. And oddly there even seems to be a faint spritz, so wonder if some CO2 is added for freshness in lieu of enough SO2. But with all that said, this was fun for now. I bought a few bottles of the 2018 rouge "Cras" and will try one of those within the next few months.
