Open for a ninety minutes at cellar temp (55°F) with a light chill in the ice bucket. This is a very satisfying Chardonnay, very light on its feet and not an off-note to be found. Wonderfully easy to drink.

The bright tones show right away. Sea air, limestone, and lemon/lime. Clean and salty on the palette, with acid showing most prominently on the side palette. Opens nicely with air, revealing elegant oak treatment. Whiff of butterscotch and a kiss on the palette.

Peay makes one of the few truly ageworthy Chardonnays in California. A 2004 last month showed beautifully. They can also drink well young, but based on tonight's showing of the 2018, I'm probably going to squirrel this away for another 5-10 years. Beautifully mineral, laser acid, very savory, and honestly a little awkward right now.
