This is actually a Cavalieri del Tartufo bottle, purchased from Chambers St approximately six months ago. The bottle was opened approximately 3 hours before serving. I decanted it off its sediment at that time into a narrow base decanter. I poured one glass that I followed until serving. Initially, the wine showed mostly stewed fruit and tertiary elements but at three hours, it had evolved into a lovely wine. I picked up light red fruits, clear acidity, and the classic tar and rose components. It had a long finish and still showed a bit of structure. Paired excellently with homemade pasta with butter and fresh shaved black truffle.

Brickish and somewhat cloudy hue. 1 hour slo-o. Earthy nose and palate and closed at first. As it sat in the glass, the fruit began to evolve nicely and the presence of an aged old world Barolo was evident. Tannins were soft and finish had good length.

Can't express how much I love this wine. Dry blood color with a tawny rim, this Barolo was still zinging with the acidity of freshly peeled apple skins and masculine yet serene tannin that have integrated perfectly. Notes of black cherry, prunes, dry orange peel, red rose water, turmeric spice, fennel, cacao beans, truffle, tar, licorice, walnut skins, and salty minerality from Barolo's signature calcareous soils on the finish.
