  • Light lemon-yellow, the aroma is captivating with oyster shell, mineral, wet soil (petrichor) with lemon and crunchy green apple.
    Fabulous line and linearity to the entry, there is a savoury restraint that feels buttoned up at the moment. Intense with a core of crushed oystershells, quarry dust and a squeeze of Lemon juice heightened by a bracing acidity. There is still some richness along with concentration that gives complexity to the wine but this is all about finesse. Well-knit with a long mineral finish, the wine paired perfectly with smoked salmon mousse.
