Pall Mall 67 - Singapore. You know you have a wine for a geeky crowd when you need for funk and reduction to blow over. Skin contact has made the colour positively orange. It gets better with air. This is very dry and borderline austere. Will delight the fans of the most die hard traditional-cum -natural wines. Not for newbies / recent converts. The structure and poise are great. Sort of reminds me of a Richard Leroy wine.

Bright yellow colour. The nose is fresh like salty sea air, there’s some lemon and a little touch of matchstick. Lovely texture, the lightest grip and lovely yellow fruits. Really poised. Excellent.

Much more civilised than (almost) two years ago, when I last tasted this. It seems to have simmered down, and the remaining reduction on the nose is easily resolved by a quick decant. It now does exactly what it says on the tin - with admirable precision. Apple and citrus flavours and bright acidity from the Listán (a.k.a. Palomino Fino), spicy minerality from the volcanic soils, yeasty and green olive aromas from the flor ageing, slender and energetic palate, long finish with very good resonance. Wonderful clarity of expression, in characteristically terse vocabulary.

Pop n poured. Arresting oxidised fino sherry flavour profile that caught me unawares. Wanted to love this (my parentage is Canary Islands) but couldn't. Too confronting and after reading XA's note I should have left it overnight but regretfully didn't. I have certainly tasted better from the Islands.
