With pork butt slow-simmered in wine sauce and shiitake-porchini risotto. I.e. needed a worthy wine
Did the job commendably. 3 hour double decant and then fridge. Lots of sediment.
Lot of oak - but more velvety vs harsh vanilla. Long finish. In some ways like an expense account steakhouse wine....except that jam and chocolate does not smother because there is enough acid-brightness as a counterpoint
Middle competed a bit with the food. Not in a bad way but just enough to wonder if a nebbiolo would have been a better accompaniment to the sauce
Ready with decant. Likely do well for next 3-5 years. Will plan to serve with more steakhouse style food - simple meat, creamy or roasted sides, etc

Decanted for 4-5 hours. Strong tannins still, but tastes like the potential is there for something great. Enjoyable first glass and a half, will be paired with filet in a few hours.

One of the top 3 de Négoce cabs ive tried so far. Medium acidity, chewy teeth-coating youthful tannins, nice mouthfeel and weight. Dark purple color, dark red fruit. Not overly oaked, a far cry from OG1. This one has excellent potential. Glad to find a winner in my de Négoce wines, the past several have been less than ideal.

It’s pretty early to drink this but I was curious… the rec on the de negoce website was to decant for 24 hours. I opened it, decanted for 3, had a small glass, the back in the bottle for tomorrow. Dark fruit, blue and black. A fair amount of oak, vanilla, chocolate. Voluptuous mouth feel with some tannins. Decent structure here and I can see that this wines better days are ahead. It’s a big wine no doubt but a crowd pleaser. A little hot from the etoh but if you can tolerate some alcohol this should be fine. It was fun and I enjoyed it but you’d do well to hold.

Wonderful nose, this one is strong, full bodied and yet well balanced, smooth and chewy, jammy. Amazing deal, will order more if available.
