D5 DipWSET FORTIFIED WINES with Adam Chase and Matt Gaughan; 4/9/2022-4/10/2022 (St Francis' Yacht Club San Francisco): A: Pale Brown N: Medium (-) nose with dried dates, quince past, almond, smoky tobacco, fresh yellow apple P: Medium sweet [Instrutor says SWEET], medium (-) acid, medium alcohol (17%), medium (+) intensity , full body, medium (+) finish C: Cloring sweetness without the acidity to help and so quite dead and lacking freshness on the palate. Not quite the complexity one might hope for either. Its a good quality wine, however.

Dark amber. Nose is rum raisin cake with a slight smokiness. Palate is raisins, plum, freshly-cracked black pepper, with a hint of orange and apricot. Very dry for a sherry. High alcohol, but otherwise smooth.

Pop and Pour: brown colour, smells of almonds, raisins and smoke, light to medium body, neither overly sweet nor sticky, in the mouth raisins and some acidity, in the aftertaste raisins and some smoke, medium to long finish (20-30 secs), a decent Cream Sherry for the price (I paid 6,75 Euros)

Molasses jaggery, alcohol, vanilla, pineapple lime, date, almond flour, burnt orange caramel,
Thinner than hoped, kind of weak on the palate but the finish is king and slow lay fading back down the tongue
