Decanted ~3 hours before serving. It needed the time and air to open up. This is a monster wine with everything turned up to 11. I served this alongside a Niepoort Coche to illustrate the difference in body and alcohol level you can see in white wines. This aptly played the role of the big-bodied exemplar. Very ripe, and in some ways almost cartoonish.

Birthday/Valentine's Day bottle at Alexander's Garden......Carol was so cute arranging a birthday dinner for me, not knowing that I was arranging an early Valentine's dinner for her.......
Slow ox'd this with cork out of bottle for 2 hours before putting it under stopper and taking it tableside.
Vanilla, lemon cream, pear, oak and barrel spice on the nose and palate. Thoroughly enjoyed with her beet salad and my escargot. Last glass at home, after 4+ hours of slow ox reveals a bit more oak on the ending. So smooth, classy and rich.....Happy Valentine's baby.
Absolutely brilliant The nose was peach and white flowers. The palate is white flowers, peach, a hint of tangerine and a little oak. The finish is just beautiful. As said by others, this vineyard, as with all Aubert chardonnays should not be served too cold. Served with a platter of sushi.

Better than my last bottle which may have been off. Lovely classic Aubert, seems to be more restrained with the oak, but still has the Aubert precision. Great drink.
