If ever there was a testament for allowing wine to breath, our most recent purchase confirms those benefits - I have a bad habit of sampling new purchases too soon! I opened the wine at the beginning of cooking to sample. The aroma and taste were in keeping with a traditional Cabernet Sauvignon - fruit forward, but the tannins over-powered the taste. Not unpleasant, but an indication that the wine was opened too soon. I paired the wine with a roasted steak; by the time we sat down to eat, the wine had transformed. Beautiful, subtle fruit and a very balanced finish, but the best is yet too come. The remaining bottles will not grace our table for at least five years.
