PnP. Some honey and apricot on the nose. The palate seems thin with modest, simple sweetness and some acid. Maybe not a great bottle, but very unimpressed.

Nose: Dried apricot, Belgian tripel. Palate: HONEY and dried apricot. Very sweet (of course) with not enough acid to brighten things up. First Sauternes, and I'm well aware this is bottom of the barrel for the AOC. Doesn't have the complexity or lifting acidity I've come to understand that a Sauternes should have. Next one will be a better one to compare.
Day 2 I get nail polish remover and papaya in the nose, and there's a bit more perceived acid on the tongue.
Day 3 and beyond: nail polish remover goes away. Feels lighter on its feet at this point. Acidity comes out more. Nice balance of honey and dried apricot with touches of passion fruit. Raising the rating a bit after it's developed over several days.

While relatively light and not an extended ager, this wine delivers! Many Sauternes in this light style come up short on acid. Not this one. Excellent pairing with Stilton.
