Montly wine tasting at Clos du Stavanger - bring a bottle May 2012 (Stokkaveien, Stavanger): Yuhu!! Opening a Duplessis with some age is always a process of hoping but not knowing what you will get. Quite a few bottles will be off par, but some will also be more quintessential chablis than anything else out there. And this was clearly one of those great bottles. Fantastically intense sea shell minerality. Some barnyard. Still young and a 100 % perfect bottle. Magic nose. Perfection also in the mouth. Very intense with the essence of oysters. Totally fantastic finish in a style that no one does better than Duplessis. Pure salt water with an incredibly strong taste of oysters, almost like if the raw oyster is stuck in your throat on its way down. This is close to perfection in a bottle, and an incredible bargain at its price.

Textbook Chablis - no matter how many times you call another wine "Chablisienne," nothing else in the world can render this wine's flinty minerality and pure, lean, oceanic fruit that tastes like a liquified oyster.

Chablis with Vitis Bergensis (Hotel Terminus, Bergen, Norway): The nose is closer to the 2000 MdT than to the 1999 Fourchaume. This has more intensity than the 99. Also there is lots of barnyard and minerals. On the palate it is more consentrated than the 99 and has more pure power. Still it is quite tight. Long and spicy aftertaste. Clearly a wine that will benefit from further cellaring.Delicious and clearly the wine of the flight.

Dry, fat. Medium+ intensity, med+ acidity, med alcohol. More yellow fruits, balanced, viscosity, creamy.
