Toasted hazlenuts, ripe apricot, white ripe peach, fresh baked crusty bread, fresh tarragon, white button mushrooms and toasted cardamom and cumin on the nose. Smells very slightly oxidative. High intensity of aromas, and extremely complex. The palate adds ripe golden apples and marshmallow fluff, loses some of the spice but keeps the nuts/oxidative traits. Medium + intensity of flavors. Lingering finish of around 30 seconds. Pretty vinous Champagne, though a little more of a mousse than others made in that style. Texturally creamy without being too heavy.
Medium + body with ripping high acid. Had with a four course tasting menu centered around seafood, as well as a squab main and it paired perfectly with everything.

Nose: crispy pear, brioche, caramel, white flower, granny Smith Notes: LC 18. Slightly oxidative in a very stylish way, this Champagne is very energetic and has a very attractive white flower aroma. Dubbed as one of the apprentice of Selosse I can taste the resemblance and this indeed is an excellent Champagne. Couple more years of aging would bring this into the next level despite it's already pretty delicious now. Believed to be negoce (I.e. bought grapes), Prevost demonstrates the highest level of sophistication in Champagne making and it is rare for a blanc de noir to express these kind of clean and crispy notes.
