Drank over 3 hours, Zalto stemware Well 3 years later the next bottle, bottle number 003188, is tasting mighty fine. Tertiary notes have started to develop, so much so that at the outset I thought we might’ve waited too long. The first tiny pour from the bottle was soil and mushroom, all soft and muted, and I thought “oh no, the last bottle was so much better!” But a few hours later the wine has found some balance, landing in a mice place where the tertiary notes are coming through but the acid and fruit still show up nicely. I asked my wife whether we drink our next, and last, bottle soon or do we roll the dice and wait to see what happens, possibly another two years... Her answer? “Or five years.” Ok. I guess we’re rolling the dice. Incredibly interested in hearing what anyone else has to say if they open a bottle in the interim. Drink now, or hold to see what the remaining tannin and acid can support the development of.

It's been about a year since the last bottle, and while the flavor profile is similar to my last note, this bottle was positively singing. Aromatically beguiling, texturally marvelous, lean and dry, yet fully realized dark fruit and spice with abundant acid. Everything I want in a wine, potent without extraction, mature fruit without sweet, earth and spice in complement, tannins and acid in harmony. Everyone kept coming back to this bottle for more as it was a wonderful pairing with braised duck legs. While there is no reason to think this wine will not last for years more, it was in such harmony, there is plenty of reason to drink currently.

Garrigue strawberries, cherries, leather and spices, with a hint of menthol on the nose, leading into a fine, elegant mouthful of the same. Very distinguished, with subtle, sleek flavours and a good finish, this is an excellent example of a top Languedoc.

Fully mature now, no point in waiting longer. Based on my experience with the 04 and 05s, these wines don't hold their peak very long
