    This drink is a strongly reductive aromatic shock.* Aromas of mulled strawberries and onion precede salt-sour hemp gums, blueberry gunpowder, rick-rack plantain, and dough-quarries of white stone. Gorgeous material pulses through the core—lime, ginger, rose; all the hallmarks of the A.J. Adam Dhron experience.
    This wine is clearly in an outwardly sulfur phase, masking internal aesthetics (relative/quasi stumm.) I might not even score it but for the corrective in light of my previous note. I'm optimistic about the remaining bottles, and I won't open the next one until after mid-2026 or so.

    *This is so unexpected that I wonder if the sensation is enhanced by context. This note comes after a particularly clean and equilibrated liter of Wallufer trocken. Fwiw, I didn't notice it as much when it followed a Kirchspiel GG 48 hours ago.

    Ok, now 72 hours later I have it figured out. Reductive notes/sulfur seem to have abated considerably. It's worth aerating this wine thoroughly or waiting a few years to open it. I find it interesting/confirming the degree to which it became objectionable in specific palate context. So, on day 1 after a young Keller GG, the fault was evident but not critical. On day 3 after a clean Wallufer trocken, it was nearly unforgivable. Now, on day 4, and after a snack of cold parmesan brussels sprouts, this wine tastes nearly fine! I imagine a trend line over days where reductive sulfur notes effectively vacate the experience, *and a variable within that trend* determined by the sulfur profile of drinks and foods on the same table. In other words, if you must open and drink this wine this year, without aeration, order the cabbage! (Or perhaps asparagus.)

  • 1/6. 12% abv. AP 06. 62°F. There is an unusual pace to the shifting sensations in this drink. It begins with a nose heavy with sweet herbs, grapefruit and citronella. Subordinate layers of yuzu, gooseberry, cherry pit, and hot cinnamon candy finally invite an impatient drink. Thick, taut, and arid connective structures teem with exotic linzer jams, poppyseed, obsidian gravel, and blackberry. Ruthlessly dry. Fat with bone extract. It's severe as a drink finishes bitter, only to shimmer a residue of busy pollination and other savage, botanical perfumes.

  • PnP, then drunk over three evenings.
    The nose is wonderful, complex and changing with temperature and over the three evenings, but never losing freshness: elegant tropical fruit, powdered sugar, herbs.
    The palate is intensely mineral, light but strong, with a wonderful drive and a growing intensity towards the finish, which is very long. Light chalky texture.
    What a pleasure!
