  • The wine is made from 100% Savagnin (apparently also called Naturé), fermented with indigenous yeasts, and aged in large wooden casks and amphorae. Basically a natural wine in all its essence, except it’s not made with total disregard for the qualities of winemaking.

    The nose is all about salty pickled lemons, a teeny hint of Brett (the bacteria, not the dude) and VA, some cheesy and waxy notes, and a sprinkle of the Jura he me sais quois. The palate was a little tame at first, but now after 5 hours, it has shed some funk, and picked up more intensity. Super mouthwatering, salty pickled lemons, racy but rounded acidity, waxy, but also a little fatty in the mouthfeel. It’s a wine that makes me wish I liked Comté.

    This was decent, not mind blowing, but solid, expect for the price. I’ll grab a couple more, and see how they develop.
