  • A few years ago, Kathy and I dined in Marseille. On the waterfront. We had fish. White fish. The freshness, the preparation, the presentation, everything about that meal set a new standard for us.

    Today, we’ll try something similar at home. Our recipe for Mediterranean baked white fish included olive oil, pepper and salt, lemons, cherry tomatoes, green olives, bit of red onion, garlic, oregano and fresh thyme. Kathy added a dish of green beans almandine and a basic rice pilaf.

    For this occasion, I opened a bottle of Bishop’s Peak 2019 Chardonnay. Talley Vineyards make this wine from grapes sourced in San Luis Obispo County, and develops it with stainless steel and neutral oak.

    We didn’t have the ambiance of Marseille of course, but we did have Edith Piaf. It worked well. The food was delicious and the steel aged Chardonnay was a good match. Fresh, crisp, lemons, and tart apples. I thought for a moment I could smell the sea.
