    It’s difficult to keep my hands away from this rosé de saignée which intrigues me! Even though probably (too?) young, I decided to open a bottle from the lot I have just to gauge the level. Probably based on 2019.

    When opened, the bubble is abundant, the wine could have been decanted but it was aerated for a long time which was beneficial to it. The choice of a large pinot noir type glass was also profitable.

    Once the foam of the effervescence has dissipated, the juice offers an impactful attack, all in freshness, then on an intense red fruit coulis. It is a flavorful and very pleasant champagne. Good structure even if I would have liked to have a more vinous and longer finish.

    Very good champagne, still reasonably priced which is becoming rare for Rosé de Saignée.

  • Zero/zero Brut Nature Rosé de Saignée. 67 PM, 33 PN

    Tart red cherries, maple sap, grapefruit/pomelo, white pepper and autolytic yeast on the nose. A weird umami thing that reminds me of dog kibble, too, but thankfully that blew off in 30 minutes. Smells very mineral driven and dry. The palate, IMO, is more interesting. It shows flavors of juniper berries, fennel seed, tart cranberriees, lingonberries and black licorice. Finishes with wet stone and more bitter yeast. Texturally viscous and chalky.

    Bone dry with a medium body, medium + acid and an agressive mousse that blows off more quickly than expected. Not my favorite Rosé de Saignée, but an interesting and tasty novelty nontheless.

  • Yeasty nose. Palate yeast, underripe red fruits, some bramble. Decent structure and interesting colour.

    This was fine, but overall I don't rate Chavost's Champagnes as much as most other growers from what I've tried.
