Color: straw with green reflexes Nose: starts fairly closed up on pertichor and pollen; then opens up with a bit of baked pastry and warm butter, toasted almond, fennel and mint, and the faintest underripe yellow fruit Palate: medoum-high acidity for a medium-full body. Salty, slight toasted notes go with hints of fruit. Fennel again, wet stones Finish: long
Very tightly wound at this stage, it still delivers pleasure in a very very stern way with its length. Definitely worth waiting a bit here in my view. Had with bottarga which was a good match, needed 2 hours of air and cool room temp

Lovely. More of a mid-weight than its 12.8% would suggest.

Briny. Foggy location, white sandy soil with calcifying marine life. Think Burgundian.
