Lovely pale golden color with a tiny green hue. Amazingly small bubbles enthusiastically generated. Lemon curd, slate, lychee, and lilac on the nose. Ooops: a modicum of yeastiness, as well. A pronounced lemony (fruit and rind) minerality emerges on tongue with an interplay in which a subtle bitterness prevails over just a dram of sweetness. This Cava is well structured and enjoyable, even if I continue to be a Champagne snob!

This Cava is well structured and enjoyable, even if I continue to be a Champagne snob!
