Wines with porchetta (Chicago, IL): Served double blind. Obviously chardonnay with a somewhat French disposition. Drinks a bit like a Chablis in that it doesn't have the full on weight of a Côte de Beaune, but the oak profile doesn't seem quite right either. Couldn't place it anywhere in France after all, and playing the player, Ceritas was as good a guess as any. Mineral and citric, with a good touch of lightly toasted oak. Very nice.

Deep, complex, and profound. Acidity like Chablis (oh, how I love wines from this vineyard), yet more complex than 1er cru Chablis. And not as heavy as grand cru Chablis typically gets. Goldilocks. Likely upscore with time. 12.9%

Might have opened it too soon. Very high in acidity, almost old world chenin level. Very lean, not seeing the influence of the extended sur-lie aging. Tart fruit. Needs time.
