The wine softens and opens up nicely with time. Even better on day 2 with cedarbox and chocolate covered candied cherry emerging on the nose, but still some nice earhtiness.

A complex body that is full Finish: soft generous long Color: Garnet Red with a purple tinge Chill Factor: 60 F Decanter/Breathing time: 60 minutes Potential: Could Cellar until 2012, but drinkable right away. Food: Good before, during and after dinner. We drank it with Italian Pasta. Recommend drinking this wine with a meal. Overall Opinion: This is a Good Carmenère. Although we let it breathe for an hour, we could still taste the 14.5% alcohol. Not that we minded, but we would have ranked this higher. A total wine workout that causes perspiration.
