1. Appearance Clarity: Clear Intensity: Deep Color: Dark ruby, verging on purple Core vs. Rim Development: The core is dense and opaque, suggesting a concentrated wine, with a slightly lighter rim indicating youth but starting to show signs of maturation.
2. Nose Condition: Clean Intensity: High Aroma/Bouquet: Fruit: Blackberry, ripe plums, and dark cherries Flower: There are subtle floral undertones, perhaps violet Earth: Hints of earth and a trace of minerality Mineral: Slight graphite and wet stone, enhancing complexity Wood: Rich oak, with notes of espresso, chocolate, and vanilla from barrel aging
3. Palate Sweetness: Dry Acidity: Medium to high – adds freshness and vitality Tannin: High – robust, well-structured, and fine-grained Flavor Character: Fruit: Continues with dark and rich fruits like blackberry and plum, underscored by a hint of morello cherry Flower: Floral aspects are minimal but add a touch of elegance Earth: Soft earthy notes blend subtly with the fruit Mineral: Background mineral elements provide structure and complexity Wood: Prominent oak aging contributes deep espresso, dark chocolate, and vanilla flavors, integrating well with the fruit
Body/Alcohol: Full-bodied, with substantial alcohol that is well integrated, contributing to the wine’s richness and depth
Length: Long, with a lingering finish that continues with dark fruit flavors and sophisticated oak spices Conclusion
Quality with Respect to Price: Achaval Ferrer Quimera is recognized for its exceptional quality and complexity, typical of a high-end blend from Mendoza. It offers value for its price, particularly for those who appreciate well-crafted Argentine blends.
Maturity with Respect to Ageing: This wine is enjoyable now but will benefit from further aging, which could enhance its complexity and soften its robust tannins. It has the potential to age gracefully over the next decade.
Food and Wine Pairing: Best paired with rich, flavorful meats like grilled steak, roast lamb, or game. Its structure and intensity also make it suitable for pairing with aged cheeses or dishes with complex, savory sauces.

Double decanted three hours before service. Opaque purple. Medium acidity and tannins. Lots of black fruit. Very easy to drink and pairs really well with red meats, heavy mushroom sauces. Just a baby.

Pretty nice but faded... soft flavors with no overt character, just a mild pleasant red.
