  Definitely gets better with air, found in a small wine shop in Toulouse France. Went to Sunday market graves some Comte cheese and a fresh baguette. This was quite a experience, my first vin jaune. Lots of bruised apple, rich but good acidity. What set this appart for me was the texture , it was perfect and just floated effortlessly across my pallet. Definitely an amazing wine I was luck to find.
