  • A blend of 80% Chardonnay (planted in the late 1980's) and 20% Savagnin (planted in 2013) - quite unique in the Pays Nantais. Organic and biodynamic viticulture. Fermented with indigenous yeasts, aged for 14 months in amphora (90%) and barrel (10%). Wonderful brininess on the nose - the aromatically always subtle Chardonnay is taking a back seat here to the terroir in this cool climate, the palate is silky and steely, a bit like an Aligoté, the savoury notes of the Savagnin dominate on the finish. There is real interest here. At wine bar Oocker, Amsterdam, NL.
