A little plastic/reduction lead the nose, followed by lemon juice, white peach, iodine, charred cedar, corn and vanilla. Definitely some oak here, with a medium intensity of aromas. The palate adds dough and fresh baked bread at the start, finishing with oak flavors. It's mostly consistent with the aromas other than the leesy flavors. Medium intensity of flavors.
Medium body with medium acid. Developing. Will improve after 2-3 more years in the bottle.

Another bottle after almost 5 months. Similar notes as my last bottle on October 18, 2023. Still young, fresh and minerally. The one difference was the emergence of maltose (malt sugar) and honey notes.

Shiny, pale greenish-yellow. Lemon curd, lime cordial, candied almond, white flowers and oyster shell. Fresh, delicate but lively. I would drink this vintage young, so to enjoy its freshness.
In contrast to the 2020 ripe vintage, this 2021 seemed to have shrunk a size or two. I would buy and drink 2020 over 2021 whenever I could.
