  • Agree with the prior commenter. This is a very nice bottle of bourgogne, but for now it is totally reduced and needs a lot of air to emerge.

  • Opened 90 mins before drinking, decanted for a half hour of that time. Reduced to the point where it was hard to tell what else was happening with the wine, at first. It’s a vaguely skunky kind of reduction, not off putting, but definitely distracting. With time some green herbal scents emerge, and mineral aromas of chalk too. Three plus hours in, the reduction fully blew off and the wine showed some lovely floral aromas. It’s a complex nose at this level. Palate is just barely medium bodied, well balanced, and quite elegant, a pure expression of mineral. It’s a very good wine, albeit one that requires a real decant, and one that loudly carries the producers signature.

  • First Paul Pillot; been curious to try given the hype; wax sealed natural cork closure; this has a very reductive gunflint smell with citrus and green apple underlying; very bright and energetic with solid depth for a Bourgogne; good with zippy acidity that with the right pairing would be really nice. Overall I'd say it was definitely something I liked. I've had Bourgogne blanc with better overall depth and balance, but not many. Price is high-ish, though Roulot's is nearly double the price. I probably wouldn't buy this again for this price, but I'd pay the CT average for it. Will be curious to try some of the village stuff.

  • Pale yellow with green tint. Lemon, citrus, oak, toasted barrel, popcorn, and almond. Fresh, bold and balanced.

    2021 was a very difficult year, but this Bourgogne Blanc was fantastic. I would drink them early.
