Nose: Brioche and marzipan. Caramel. Lightly oxidative. Strawberry jam. Cherry, lemon, grapefruit. Crème de cassis.
Palate: Really lovely in the mouth. Strawberry, cherry. Lemon juice. Brioche. Wonderfully tart. Touch of grapefruit and sea-shells. Green apple.
Finish: Long. Lemon and brioche linger, before tapering off to cherry and strawberry.
Overall: For me, the mark of a great wine is that I feel a slight pang of sadness when I poor the final glass. This bottle absolutely fits into that category.

Appearance: Bright and clear, the wine is of medium salmon colour, with fine and consistent bubbles and legs. Nose: Clean, with medium (+) intensity aromas of citrus fruit of lemon, green fruit of apple, red fruit of strawberry, autolytic notes of yeast, mineral notes of stony, floral notes of orange blossom, sweet spice of ginger. The wine is developing. Palate: Dry with high acidity, the wine has medium alcohol, medium (-) body, with medium (+) intensity flavours of citrus fruit of citrus fruit of grapefruit, green fruit of apple, red fruit of raspberry, autolytic notes of yeast, mineral notes of stony. The wine has a medium (+) finish. Conclusion: Very good quality Champagne with an intense nose showing good elegant and complex aromas, with the long ageing on lees apparent from the nice yeasty notes that are perfectly harmonized. On the palate the wine has good acidity, vibrant and energetic, well-balanced and delicious with good concentration of flavours and a fairly long finish. Ready to drink now, it can further develop for another 3-5 years.

Rosé champagne session by Asparagus at Maison Dakota. Tasted blind. Drank in Gabriel Standart. Appearanxce is clear, pale intensity, salmon pink with an orange hue. Thin legs. Fine bubbles. Nose medium intensity, with aroms of orange blossoms, tangerines, orange peel skins, hint of oxidativeness. Developing. On the palate, dry, very high acidity, medium- alcohol (12.5%), medium body. Medium+ flavour intensity, with flavours of strong orange tangerine, sweet spices, salty minerality. Long salty finish. Gets more savoury with air also. Very good quality. Going strong and might improve more with more bottle age. First bottle of the night to be emptied. Assemblage base vendange 2017. Dosage 2g/l. Disgorged Sep 2022. 70% Pinot Noir, 30% Chardonnay (with 5% Coteaux Champenois)
