  Drank this over 4 days and the last sips on day 4 were the best.
  At first, lots of spice and herbal characteristics. Eucalyptus, mint, and spruce tips. Fruit is there on the palate but brooding in the background. Very peppery and stemmy.
  Over the few days, this slowly opened up and the olive fruit emerged. I didn't get lovely floral aromas until day 3 or 4.
  
  Really coiled and wound tight at this stage, definitely give it lots of air or ideally more bottle time before opening.
