Very nice champagne! Slightly fizzy but not as much as other reviewers experienced. Yellow fruit, mineral, sort of honey and good acidity. Served blind to friends who for sure said it was a BdB. I kind of agree with their impression of the wine even though the back label states 80% Pinot noir and 20% chardonnay.

Mine also fizzed over on open from fridge cold. The mousse was as coarse as a sailor's vocab. This tasted like cheap champagne - in the same league as Nicolas Feuillate. Big unusual miss for Savart.

This bubbled over at fridge cold, after a whisper opening. A lot actually. The mousse is quite rough too. That aside, this drank more like a classic big house wine on night one. Sweet tart finish behind bright, fresh pears and apples. It settles onto it's bones on night two with a more mellow yet integrated expression. The sweet tart has been replaced by a relaxed finished showing some pith and freshness. Apple with some grapefruit. Ultimately this is more experimental grower than a cohesive wine.
