  Brand new 2023s and wanted to try a ‘raw’ one. Pale golden yellow. Saline lemon nose, faint peach and honey, crystalline and structured, dash of lime zest. Sharp taut opening acidity on tasting, almost puckering, there’s lime oil and zest, it’s incredibly young and unformed. Has potential and needs a few years to come together, and the 2025 starting date seems reasonable on this tasting. Day 2, has settled, the acidity rounded off and this is enjoyable. Acidity has the good lime oil zest, and nicely structured with a tiny hint of sweetness poking though. Really good.
