Another step up is the idea... 40 - 70 year old vineyards. Different soils but there is a dominate soil type. Three different vineyards and towns. Fermented in concrete and then 50% afterwards in foudres. With a little bit more of that shist character to it. And more chiseled on the palate. Fresher as it were.
