  • Root Day - Pale lemon in the glass. Nose while still chilled is light lemon, mineral, spice and light herbs with a bit of saline as well. On the palate it’s crisp with medium plus acidity but still quite a full mouthfeel. Flavours are (to me) classic Chablis - mineral, crushed rock, lemon, lemon zest and apple. The medium length finish carries the apple and lemon flavours along with some zip from the acidity, minerality and spice.

    When allowed to warm in the glass, the flint, mineral and lemon increase on the nose and there’s some white flower emerging as well. On the palate the citrus and apple is front and centre with the crushed rock, mineral and white flowers playing the supporting role. The finish carries the palate in the same way.
    I hate to say this, due to the cost, but in BC, Canada this is a very well priced Chablis.
