  • garnet-ruby colour with tawny rim and viscous in the glass. heady sweet nose of reduced red fruit compote, dark caramel, and ripe black figs with subtle savoury balsamic whiffs. silky and concentrated in the palate the stewed fruit layers are laced with notes of herbal syrup, cocoa powder, clove and cinnamon spice, and Seville orange peel. a faint but lovely mushroom vein pops in and out, bringing an umami element to the experience. subtle acidic lift and long finish.

    fresh and intense at once, complex, satisfying, contemplative, and likely indulgent if paired with ~70% dark chocolate.

    [while i was not able to find specific information as to how this particular wine was made, the process for this style is generally the following: the addition of a neutral grape brandy to the fermenting must arrests the fermentation ("mutage") raising the alcohol level while maintaining natural sweetness; the wine is then aged for a number of years in large casks; this aged wine is then transferred to 60L glass demi-johns, which, covered but unsealed, are left out in the sun and Tramontana winds for a year. during the cask ageing process it is common to use solera-style fractional blending, however this particular wine is all of the same vintage].
