This is a delicious Champagne - I must buy more. I MUST also remember how much it evolves and broadens in taste and complexity after 30 mins - so dont rush to drink once opened!

Flowers citrus fruits and pears, a little yeast with allot of minerals and sea shells on the nose. A bit like a Chablis. Palate is creamy with high minerality, chalk, clean with lemons, lime and grey pears. Good acidity and lift on the medium length finish. Good mousse.

Mouchonnat Annual Off-Tasting - Grands Jours de Bourgogne (Beaune): Walk around tasting. No dosage, 2016 base, 1/3 each Chardonnay, Pinot Noir, and Meunier. Lean but balanced, finished a bit tart.

Well structured. Decently fine bubbles. Crisp with pear notes. Good with cold crab, and as an aperitif.
