Killer aged chablis with bruised apple, marly chalk, heady chablis character, concentrated, super long tingly finish, super delish but on the mature side for this tasting. I gave this "94+" and thus was my WOTN, which happened to be my wine. Tied for #1/13 with Dauvissat Les Clos '16, which was my #2 fav. DD, Capital Seafood BH

Light yellow color, after opening sea breeze, but fairly closed. Needed some minutes to develop, became highly saline. A cristaline wine with very good length and high dry extract. From a warm terroir in a cold year.

Indeed Dauvissat on the nose with aromas of lobster, seaweed, salty sea water, some reductive aromas, unripe peach and grilled lemon. High acidity and very fresh on the palate. Lovely minerality. Drinks nicely now but will develop even further - not old at all.

Seventeenth Annual White Truffle Dinner (Hughes House - Chicago IL): In 08/07/00 vertical. Drinkable but fully+ mature. Most of the Dauvissat 2007s I have tasted from 2018 forward have been too advanced.
