Had my final bottle of this with lobster scampi w/ squid ink linguine. Absolutely perfect. Really stupidly good. As the bottle I had 5 years ago, I am not sure why it surprises me how good this is. After all, it is a PC Chablis from Les Forets (which dates back to the 14th century). It may be that I only paid $20 for this back in the day, which today seems insane. Perfect citrusy fruit, gobs of minerals, laser beams of acid, and a chalky oyster-shell finish that goes on far longer than it really should.

Drinking great at the moment and way above its price point w true PC character. Green apples, under-ripe pears, chalk, steel, and wet stone. This is very typical and very unctuous. Hard to stop drinking. I think this has aged beautifully and has increased in length I would gather. In the zone, but will last a few more years well-stored.

Pop and pour and this was drinking great right out of the bottle. Vibrant and fresh - impossible to put the glass down. Nice combination of roundness on the palate, mineral intensity and precision. Good length and complexity. I could drink this every day.

This was the seventh bottle of a case already consumed. Too bad there is not another case. Wonderful to taste the fruit and have a couple of years under its belt to subdue the acidity. So fresh and vibrant. This will be solid for years.

Green apple and lemon palate, light to medium bodied with medium+ acidity. Nice cut and decent balance. Only nit is that there is some noticeable oak influence and it finishes with a touch of bitterness. I will hold my remaining bottles for a couple of years and hope for no prem-ox.
