  • Cabernet (and blends) celebration (Ben and Estella's place, Parramatta): Served blind.
    Baked black fruits, a little sweet spice, touch of volatility, smells young in this bracket, violet. Sharply adjusted acidity, loads of alcohol, quite cough medicine. Tight tannins. Meh.

  • Still has some life to it but just didn’t wow us. Bitter at first taste taste which softened after decanting for an hour. Hints of mint, vanilla, dark fruit, cherries and oakiness. Floral/perfumy but not a very long finish and unpronounceable tannins. Not our favorite but definitely drinkable. Definitely not on par with the kinds of Aussie wines we have been drinking.

    Drank another bottle august 29, 2023 and it was so lovely. Blackberry and soft tannins. Just refreshingly different from many we have drunk this summer. Perfect tonight.

  • Decanted 2 hours, but it was fairly open and expressive from the opening. In retrospect it probably doesn't need too much time in the decanter, maybe 30-45 minutes. More weight and substance than typical Coonawarra. This Empyrean is more modern and oaked than, for example, Katnook Odyssey or Parker First Growth, both more Bordeaux-styled wines. Full-bodied and masculine, the Empyrean also has a more layered, textured mouthfeel with a lot of dry fruit extract, as if there's a bit of black currant and black plum paste or puree mixed in. The oak is nicely integrated at this stage, with good coffee/mocha notes—starting to move toward smoke—edging the dark fruit profile, and picking up graphite/stone/mineral in the background. There's a bit of the exotic herbal and cola character that I find in Coonawarra, but not as pronounced in this wine as in the Odyssey or First Growth. I'll save my next bottle for 2015 or 2016, though I suspect it will go to 2020 easily. 94-95 points
