  • Having just poured a (prem)oxed bottle of Chablis down the sink, I was relieved by the absence of tell-tale sherry like aromas and served this at dinner. What a mistake! This bottle has dried out. There was almost no bouquet; just faint whiffs of cedar and floor polish. More cedar and floor polish on the palate and virtually no aromas, fruit, minerals or acidity. As a result, the finish was unpleasantly harsh with dry caramel notes similar to those often met in crudely over-oaked young wines. I suspect that most bottles are now more or less like this so I have not noted it as flawed.
