Third and final bottle, enjoyed over two nights. Identical note to previous, but noticeably lighter in colour on day two, also fresher and with more cut. Rich tropical fruit and honeycomb spice nose, marine salty tang to the palate and a long rich Folatieres finish. It remains more Dolly Parton than Audrey Hepburn in style but it’s wonderful with my pasta. I should have kept one to show the guys. 18.5.

Opened last night and it’s simply too old. Left the bottle in the frig overnight, less one glass, and it’s transformed. Not a premox bottle, at 39 years, but rejuvenated in a similar way. Dark golden colour, nose of roasted pineapple and toffee. Palate is similarly rich but held in check by a lick of salinity mid palate and a nutty/honeycomb finish. Needs food, and improves with air in the glass. Almost Sauternes-like richness. A half bottle in the frig for tomorrow.

Chicago Chardonnay Shootout (Chicago, IL): A slight hint of mushroom and definitely the oxidation's kicking in, but at 32 years, I don't think it's premox anymore. Quite a nuanced palate with nothing particular standing out but with all elements in good balance with each other. A great showing.

Chardonnay Shootout & Dinner at Sun Wah (Domaine Wine Storage & Sun Wah - Chicago, IL): Lots of waxy lemons and some butterscotch. Teetering on the brink of old age (for me) this was still holding onto some saline and pear notes from earlier days.
