Dinner at S.K.Y. (Chicago, IL): From half-bottle, no less! More than alive -- this is serious old school stuff. The dosage is generous and there's still some sweetness here, alongside some saline and nutty elements, but no old funky mushroom character. The closest comparison I can make is sherry. There's no fizz left, but that's almost a secondary concern. Delicious, and it managed to hold up for a good amount of time after opening. "There are no great wines, only great bottles."

Casual dinner at S.K.Y.: Half-bottle. A pretty remarkable experience. Mature but not at all earthy or mushroomy. Yes, it's got that sherry thing going, but clean and pure. Minimal fizz but plenty of freshness. Great experience.
