(Disgorged in 1995, 75% Pinot Noir and 25% Chardonnay, dosage probably around 10-12 gr/l) Lovely golden yellow colour and with a mature nose showing hazelnuts, honey and some dried fruit in a deep and delicious way. Still a very fresh palate showing red apples acidity combined with some drying fruit before the nice and intense lime citrus acidity takes over on the lengthy finish. This was a bit tight in the beginning, but in the end of the starter and when contemplating over the performance of the bottle it opened up in a marvellous way showing a delicious butterscotch note. (Probably best 1999-2024)

From Magnum. A very well done champagne soft and subtle citrus, straw, yeast, flowers with just enough acidity to pair with soft cheeses.
