  My comfort wine is now Coche Dury which will never disappoint or have any issue of premox. Crisp, deep, mineral, white stones. Salinity finish. With long life ahead. 5-10 years to peak with freshness or longer for more matured notes.

  Dinner at Ma Cuisine (Beaune): Coche-Dury 2008 Chevaliers. 2nd of tonight's 6 bottles. Ripe apple and peach aromas and flavors. Extremely dense, almost. Hey with intense sense of dry extract. Palate starts fat but ends textured and exciting. Maturity level corresponding to its age, I think it is approaching its peak and will drink nicely to 2020+.
