(Mostly) Chenin Night: A waxier, honeyed wine - nor too oxidized, lively apple and pear fruit with shell, tea, wax. Really good stuff, paired well with the post-dinner cheeses.

Light golden yellow. In the nose, this is super fresh with notes of just ripe quince, greenish fruit, grass, wet stone, slightly waxy, reminds me of Chablis a little bit. In the mouth, it's equally fresh with quite prominent, but well integrated acidity, again slightly green notes (not unripe, just green fruit), acidity driven finish. Excellent.

Definitely more aged character than the bottle I had 2.5 years ago- some sherry like waxy, nutty, slightly butterscotchy flavors. Still has that very high acid, lemon/green (maybe now a little baked) apple core. Love this. Wish I had another one to try in a few more years.

Wet stone and citrus on nose. Tastes remarkably like a sour lemon drop, pretty acidic. Some adored this, some thought it was too sour/acidic, everyone thought it was really interesting.

Dull golden with yellow green hues, looks more aged than I'd expect at this stage; nose has some aged notes of nutty almond paste, waxy lanolin, intense Kimmeridgian soil tones, salty, mulled green apple, luxurious and complex this is firmly in its secondary phase; the palate starts off with the nutty waxiness and apple then the final two-thirds is dominated by the extreme razor-like acid cut (disclosure: I love acid but this was almost too intense), flavor on the finish is a cross between a lime and lemon, my mouth was flooding with saliva in a milky sort of manner; another person thought this was at peak but I am positive this has a lot of life in it as the vintage probably develops earlier but the wine should stay in this stage for many more years before getting almost like a sherry in its latter life; a brilliantly complex wine that I would put up to many 1er Cru white Burgs.
