My final bottle and fortunately a very good one. True Dauvissat style on the nose, older wood, creamy lemon, oyster shell and sea breeze, just a hint of yellow apple, good depth; energetic and mineral palate, chalky austerity married to some Preuses-richness even in this lighter vintage, fresh and well-balanced, good tension; slightly light on the finish but good to very good length.

2013 Wines in Bottle Chez Vincent Dauvissat (Chablis): As is Vincent Dauvissat's wont, his daughter also finished the tasting with a wine served blind. Full yellow. Ripe, honeyed nose. Fairly viscous and full bodied with more saline Chablis character than on the nose. Good remaining acidity and freshness but fully mature. I guessed something like 1997 or 1998 but was off by a few years. A very good showing for a 2001, and of course, a treat to taste at the conclusion of this wonderful visit.

Chablis Fest (Shaw's Crab House - Chicago, IL): Loved the power and edgy palate to this wine. Tons of lime, salt, lemons, and flint. Tons of depth and complexity...thought this was one of the better wines of the night.
