  • Ripe mango, apricot, coriander, and honey on the nose. Light as a feather on the attack, it's simultaneously demi-sec rich and rainwater pure. Further down the palate it maintains its weightless elegance yet it quickly deepens and also makes me think of a summer meadow: dry grass, a few flowers swaying the breeze. Here, it's zesty and a bit spicy, and it shows both stone and lime. Great delineation — it never wobbles or broadens across the palate, thanks to the beautiful acidity — and the finish is a long ray of sunshine. I'd love to try this with foie gras or one of the more savory, vegetable-tinged desserts that are all the rage these days, e.g. spring pea and ginger creme brulée.
