Well cellared Chablis is one of the best things in wine. This speciemen is a prime example: fresh as a daisy with lovely mix of citrus, salt, brine and chalk, supported by somewhat sweeter and softer notes of pear and apple and a lovely complexity underneath it all with just hints of cheese rind, butter and bisquits. This is far from tired and with additional cellaring those secondary and tertiary impressions will gain in intenisty. For me perfect balance right now so will drink the remaining bottles over he next couple of years.

Plenty of lemon, lemon curd and lemon peel with clear Grand Cru density. Also impressive length with a minerally finish. Starting to show some signs of maturity, enjoy over the next five years.

Wonderfully rich start and middle with a bright and energetic finish that is classically Chablis. Still nicely vibrant with good weight and density.

Drank extremely well over 2 nights. Excellent concentration, depth, and acidity. Nicely done.

Dauvissat Preuses (and other Grand Cru Chablis) Virtual Tasting (Planet Earth): Lots of lemon, lemon curd, lemon peel and rich apple. Very rich and concentrated, yet also very bright and minerally. Very good length. Better and brighter vs another bottle from a few months ago.
