Firm, austere, muscular styled wine, with an herbal, leafy edge, along with cedar, mint, and property red fruits . Stern, but regal, with a crisp edge, a bit of air before service helps. Drink 2024-2045.

Always considered Chave a more Burgundian Hermitage and this one really fits the Burgundian character. Not a Pinot by any stretch but a more reserved style Heritage. The label say 13% alcohol which matches up with the style of the wine. There is definitely smoke and bacon on the nose initially which softens to a more spicy cherry nose with air. The tannins are mostly resolved and the flavors are a nice cherry, plum thing. the finish is persistent but not super long. Two thumbs up here!

95’ Chave can be a bit stubborn and tightly wound, but this 375ml bottle was ready to go after an hour in the decanter, and only continued to improve in the glass. More of a powerful and brooding vintage for Chave, without the softer elegance you can expect from many other 90s vintages. Still extremely delicious though, of course.

(Domaine Jean-Louis Chave Hermitage) Medium slightly cloudy red violet color; pepper, white pepper and lavender nose; tasty tart cherry, talicherry pepper and pepper oil palate; medium-plus finish (opened up a lot after 30 minutes in the glass) (slight plurality for WOTF, if I counted right)

Another great bottle of this. Really elegant and restrained Chave but with real depth. Long finish. I'd say at peak but should cruise for years.

Jason's birthday at Bisato (Seattle, WA, USA): Bloody. Nice cherry, pretty classically Chave.
