The first time I tried this wine was in 2010, and at the time, I found it good but a little shy. 14 years later, I still feel the same. I think that this is an interesting wine, the profile departing from Champagnes I typically drink. Initial notes were that of radish, jicama, yellow apples, Asian pear and sugar cane. On the second day, it revealed some poached apples, pineapple, fennel, and wet stones. Transparent on the palate with a clean, citrusy finish.

Purchased in 2010, so this bottle is at least 15 years old. Golden yellow color. Kaleidoscopic notes of yellow apples, candied pineapple, brown bread, unsalted butter, kiwi, nectarines, and crushed minerals. Absolutely terrific.

1993 Moët & Chandon Champagne Cuvée Dom Pérignon

It always amazes me how Dom can be so consistent and reliable, despite it massive production volume. At 30 years old, this wine exceeded my expectations and goes to show that good bones will always stand the test of time. Rich, honeyed notes of poached apples, grilled pineapple, almonds, macadamia, marigold, and salted butter on sweet brown bread; with time, a touch of oceanic minerality crept in, along with crushed shells. Perfectly balanced on the citrusy palate. The wine had gone flat, as Dom tends to do with age, but the acidity was so spot on that I didn’t even miss it. A glorious example of aged Champagne from a reputable producer.
