 3/30/2019-3/31/2019 (Hotel Ritz Carlton, AQUA Restaurant)
 

 

Had to try this restaurant because many gourmets have recommended this house as the best one in northern Germany.

Located in the VW Autostadt, so you can search for a new car too.
Could not decide whether buy an Audi Q7 E-Tron or an Maybach V8 Biturbo.............

So this hotel is one of the very best ones, a small house, very quiet location, rooms with some luxury stuff, for me the best: the SPA with an outdoor pool of 40 meters, in march not very frequented, so I could crowl around with NO disturbance! GREAT!

All of the staff are very friendly but not too servile, more the good attentive style!
The lounge with an open fire and good wines by the glass.

AQUA: we choosed the FULL program, a 9 dishes course, with a lot more from the kitchen.

Again very attentive staff, the Sommelier Herr Runge, a very competent wine host!
As all of my preselected wines were drunken, such as Krug vintage, Ridge Monte Bello, KPK Kirchspiel or a bottle from JAyer we choosed some others.
Herr Runge promised me to get me a little drunk with some other fine bottles, and he really kept his promise! ;-)

The course, I only do announce: caramelized Kalamata olive. sounds like nothing, but you have to try this once!
The best courses for us were: goose lever mousse with essence of pear-caramel, malt and peanut!
Chuck rib " Kagoshima Waygu" with sesame, fermented black salsify, white bitter and red radish.
Dessert: champagne creamsorbet "Edition Ruinart Rose" to kneel down for........., and we asked how they made it, ten minutes later the very good staff handed over a prescription form! HIGHLY RECOMMENDED!

And, with only eleven tables to serve their gourmet customers, there is no loudness or disturbance if you want to enjoy your course on your own.

 

A great wine day at Wolfsburg

    A glass to pair a small, no very small Burger made of dry aged meat, the Burger more delicious than the balanced Riesling! **
  • 2014 Domaine Fabien Coche Meursault - France, Burgundy, Côte de Beaune, Meursault (3/30/2019)
    From half bottle, great, great stunning freshness, flinty, light- to midbodied, elegant animating swallowing, TOP village Meursault, recommended! **-(***), 88, 89(+) (89 pts.)
  • N.V. Serge Mathieu Champagne Brut Rosé - France, Champagne (3/30/2019)
    A fine Champagne as an appetizer, tight raspberry, cremy, chalky, tension all the way, impressive, long, **-***(+?), 89, 90(+?) potencial (90 pts.)
  • 2015 Manincor Lieben Aich - Italy, Trentino-Alto Adige, Alto Adige, Alto Adige - Südtirol (3/30/2019)
    A recommendation of the Sommelier, Herr Runge, absolutely on the very creamy side of Sauvignon Blanc, tight though, stunning delicious yellow fruit, needs a decent decant, complex showing with more aeration, fine mineralic tones, very long finish, top bottle, **(**), 91- 93(+?) (92 pts.)
  • 2008 Château Léoville Poyferré - France, Bordeaux, Médoc, St. Julien (3/30/2019)
    By the glass, a big one, compared with a glass Calon Segur and Les Charmes, typical CS nose, cassis, more black fruit, a soft-soaper Pauillac with on the other side great tension and fine, tasty tannin, a little modern but that delicious to chew on, **(*-****), 90,91(+?) potencial (91 pts.)
  • 2009 Château Calon-Ségur - France, Bordeaux, Médoc, St. Estèphe (3/30/2019)
    By a big Bordeaux glass, showing this soft and perfumed 2009 fruit, very concentrated, silky swallowing on the midpalate, but for ME lacking some more tension and the classic Bordeaux appearance, blind would not have put this one to France, **-(***+), 90- ? (90 pts.)
  • 2006 Domaine Ponsot Chambolle-Musigny 1er Cru Les Charmes - France, Burgundy, Côte de Nuits, Chambolle-Musigny 1er Cru (3/30/2019)
    This one is for me, needs still a decent decant, at first wild, wild wild on the nose and palate, absolutely bewitching fruit, still a little tannic, but blossoms up, with more aeration really complex, fine and all the way elegant, long+ aftertaste, stunning bottle, **(**+?), 93-94(+?) potencial (94 pts.)

Not really favorable to stay a night with a visit of the AQUA over there, but WORTH EVERY SINGLE payed €!
